Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
1 large egg
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup milk (dairy or non-dairy)
2 cups grated zucchini
1 cup chocolate chips
1 tablespoon vanilla extract
Instructions
Preheat oven to 350°F (175°C)
Prepare 9×5-inch loaf pans with cooking spray
Combine flour, baking soda, cinnamon, and salt in a bowl
Mix oil, sugars, egg, milk, and vanilla until smooth
Stir in zucchini and vanilla extract
Fold in chocolate chips
Divide batter into pans and smooth surfaces
Bake 50-65 minutes or until a toothpick comes clean
Cool in pans for 10 minutes then transfer to a wire rack
