Ingredients

4 store-bought pie crusts (from 2 boxes)
4 cups apples (Honeycrisp or Granny Smith), peeled and finely diced
1.5 cups granulated sugar
4 tsp ground cinnamon
0.5 tsp ground nutmeg
4 tbsp unsalted butter, cubed
All-purpose flour for dusting


Instructions

Preheat oven to 400°F (200°C).
Roll out the pie crusts on a floured surface and cut out 24 circles using a round cookie cutter or mason jar ring.
Press each dough circle into a muffin tin to create the pie shells.
In a bowl, toss the diced apples with the sugar, cinnamon, and nutmeg.
Fill each dough-lined muffin cup with the apple mixture.
Top each pie with a small piece of cubed butter.
Bake for 22 minutes or until the crust is golden brown and the filling is bubbling.
Remove from the oven and let cool slightly before serving.

Notes

Use a variety of apples like Honeycrisp for sweetness or Granny Smith for a tart balance. If you like a lattice top, use extra dough scraps to weave strips over the apples before baking. Store in an airtight container at room temperature for up to 2 days.
