Ingredients
6 large apples (Granny Smith or Honeycrisp), peeled and diced
12 tbsp all-purpose flour
1.5 cups granulated sugar
4 tsp ground cinnamon
0.5 tsp ground nutmeg
4 tbsp unsalted butter, chilled and diced
2 boxes Pillsbury pie crusts (4 crusts total)
Instructions
Preheat your oven to 400 degrees Fahrenheit.
Unroll chilled pie crusts on a floured surface and cut out 24 circles using a cookie cutter or mason jar ring.
Press each dough circle gently into a muffin tin cup.
In a large bowl, toss the diced apples with flour, sugar, cinnamon, and nutmeg until well coated.
Spoon the apple mixture into the muffin cups, mounding them slightly.
Top each pie with a small piece of the chilled butter.
Top with remaining dough strips or circles, cutting small slits in the centers to allow steam to escape.
Brush the tops with a little melted butter.
Bake for 18 to 22 minutes until the crust is golden brown and the filling is bubbling.
Notes
Ensure your butter is cold when adding to the pies for the best texture. You can adjust the sweetness by adding slightly less sugar if your apples are naturally very sweet. Store leftovers in an airtight container or freeze for later.
