Description

Millionaire Peach Salad is a luxurious and creamy fruit dessert salad that perfectly balances the sweetness of peaches and pineapple with the satisfying crunch of toasted pecans. Built on a rich foundation of vanilla pudding, whipped topping, and tangy sour cream, this delightful dish is a beloved crowd-pleaser. With mini marshmallows and shredded coconut folded throughout, it offers an irresistible texture that is perfect for neighborhood gatherings or a sweet weeknight treat. Best of all, it requires no stove time and tastes even better after chilling.

Ingredients

15 oz sliced peaches, drained and chopped
8 oz crushed pineapple, drained thoroughly
3.4 oz instant vanilla pudding mix
8 oz whipped topping, thawed
1 cup mini marshmallows
1 cup shredded coconut
1 cup chopped pecans, toasted
0.5 cup sour cream
0.5 tsp vanilla extract

Instructions

Drain the canned peaches well and chop into bite-sized pieces.
Drain the crushed pineapple thoroughly using a mesh strainer.
In a large mixing bowl, combine the dry vanilla pudding mix and the thawed whipped topping until well incorporated.
Fold in the sour cream and vanilla extract until the mixture is smooth.
Gently stir in the prepared peaches, pineapple, marshmallows, shredded coconut, and pecans.
Cover and refrigerate for at least 2 hours before serving to allow the flavors to blend.

Notes

Ensure the pineapple is drained very well to keep the salad creamy rather than watery. Toasting the pecans beforehand significantly improves the crunch and flavor profile. Keep refrigerated when not serving.
