Ingredients

1 tablespoon Olive oil (For sautéing)
1 pound Medium ground beef (Ensure halal if needed)
1 medium Onion (Diced)
1 tablespoon Taco seasoning (Spices only, no pork/meat products)
1 teaspoon Garlic powder (Optional)
1 (15-ounce) can Diced tomatoes (Undrained)
1 cup Corn kernels (Frozen or canned)
2 cups White rice (Cooked, fluffed)
3 cups Shredded cheddar cheese (Or Mexican jack for extra tang)
1/2 tsp Black pepper
1 tsp Salt (Adjust to taste)
1-2 cups Crushed tortilla chips (For topping)


Instructions

Preheat oven to 375°F (190°C)
Heat olive oil in a skillet. Brown ground beef over medium heat, breaking it into small pieces with a spatula.
Add diced onion, taco seasoning, and garlic powder. Cook until onions are translucent.
Stir in diced tomatoes (undrained), corn, cooked rice, black pepper, and salt. Mix until well combined.
Transfer mixture to a 9×13-inch baking dish. Sprinkle half the shredded cheese over the top.
Bake uncovered for 25 minutes. Top with remaining cheese and crushed tortilla chips.
Return to the oven and bake for 10-15 minutes, until cheese is melted and bubbly.
Let rest 5 minutes before serving. Garnish with chopped cilantro or avocado if desired.
