Description

Ingredients

1 pound ground chicken
1/3 cup panko bread crumbs
1/3 cup feta cheese, crumbled
1/4 cup roasted red peppers, patted dry and chopped
1/4 cup red onion, finely diced
2 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tbsp lemon juice
2 tsp dried oregano
1/2 tsp crushed red pepper
2 tbsp olive oil
Salt and pepper to taste


Instructions

In a large mixing bowl, combine ground chicken, bread crumbs, feta, roasted red peppers, red onion, garlic, parsley, dill, lemon juice, oregano, red pepper flakes, salt, and pepper.
Mix the ingredients gently by hand until just incorporated, being careful not to overwork the meat.
Divide the mixture into four equal portions and shape them into patties.
Heat olive oil in a large skillet over medium-high heat.
Place the patties in the skillet and cook for about 5 minutes per side until golden brown and cooked through to an internal temperature of 165°F.

Notes

Ensure the roasted red peppers are patted very dry with paper towels to prevent the patties from becoming too soft.
Serve these burgers on toasted buns with tzatziki, cucumber slices, and lettuce.
These patties can be meal prepped ahead of time and kept in the refrigerator for up to 2 days before cooking.
