Ingredients

1 lb ground beef (90% lean)
4 large Russet or Yukon gold potatoes
1 small chopped onion
2 garlic cloves
1 cup cheddar cheese (sharp for depth)
1 cup beef broth (no-salt added preferred)
1 cup sour cream (or dairy-free alternative)
1 tbsp olive oil (light or extra virgin)
1 tsp paprika (cooking spice blend optional)
1 tsp dried oregano
Salt and pepper to taste
Optional toppings: green onions, cooked bacon (but no pork/lard-based bacon), additional shredded cheese


Instructions

Preheat oven to 375°F (190°C)
Heat olive oil in a skillet, cook beef over medium-high heat until browned and crumbly
Add chopped onions, garlic, paprika, oregano, salt, and pepper; sauté 3-4 minutes
Boil potatoes until tender (15-20 minutes), drained and kept warm
Layer 1/3 of beef mixture in a 9×13-inch casserole dish
Top with 1/3 of cooked potatoes, repeat layers
Pour beef broth and stir into the dish
Spread sour cream evenly across the top
Bake for 30 minutes until bubbly and golden
Let rest 10 minutes before serving

Use potato starch if not using broth for no-gluten preparation
