Ingredients

1/2 cup salted butter
1/2 cup unsweetened Dutch-processed cocoa powder
1/2 teaspoon espresso powder
14 oz. sweetened condensed milk
20 soft caramels
5 1/2 cups mini marshmallows
5 cups Rice Krispy cereal
1 teaspoon vanilla extract


Instructions

In a large pot, melt the butter, cocoa powder, and espresso powder over low heat until smooth.
Stir in the sweetened condensed milk and vanilla extract until fully incorporated.
Add the soft caramels and stir constantly until completely melted and glossy.
Remove from heat and fold in the mini marshmallows, stirring until they are mostly melted and create a stretchy consistency.
Add the Rice Krispy cereal and stir until the mixture is evenly coated with the chocolate caramel base.
Press the mixture firmly into a parchment-lined 9×13 inch baking pan.
Allow the bars to set at room temperature or in the refrigerator for at least one hour before slicing into squares.

Notes

For an added flavor profile, sprinkle a pinch of flaky sea salt on top before the bars set. Store in an airtight container at room temperature for up to 5 days. Ensure the caramels are high-quality for the best melt.
