Description

Zesty no-bake bites filled with sweet blueberries and creamy cottage cheese. These protein-packed, chewy treats are easy to make and perfect for a quick, healthy snack or dessert.


Ingredients

1 cup full-fat cottage cheese
1½ cups old-fashioned rolled oats
¼ cup dried blueberries
1 tbsp lemon zest
½ cup vanilla protein powder
2 tbsp maple syrup


Instructions

Combine cottage cheese, lemon zest, and maple syrup in a food processor until smooth
Transfer mixture to a bowl, then mix in rolled oats and protein powder
Press the mixture into an 8×8-inch baking dish using a spatula
Top evenly with dried blueberries and gently press them into the surface
Chill the mixture in the refrigerator until firm (at least 30 minutes)
Cut into 18-20 small bites using a cookie cutter or spoon
Store the remaining bites in an airtight container
