Ingredients
4 boneless, skinless chicken breasts
3 cups shredded Monterey Jack cheese
1/2 cup whole milk
2 cloves garlic (minced)
1 tbsp taco seasoning
1 tbsp onion powder
1/2 tsp cayenne pepper
1 tbsp olive oil
1 cup shredded low-moisture mozzarella cheese
4 oz pepper jack cheese, cubed
4 green chiles (canned, optional)
1/2 tsp black pepper
Instructions
Preheat oven to 400°F
Sear chicken breasts in olive oil for 2-3 minutes per side
Add minced garlic and spices to the skillet, cook 1 minute
Pour milk over chicken, bring to simmer
Transfer to oven and bake 10-12 minutes
Remove and top with shredded cheeses and cubed pepper jack
Return to oven for 2-3 minutes until cheese melts
Garnish with green chiles if using
Notes
Use a Dutch oven for even heating
Substitute southwest or pepper jack cheese if needed
Let rest 5 minutes before serving
