Ingredients
6 cups fresh peaches, peeled and sliced
2 cups granulated sugar, divided
1/4 cup water
1 tbsp fresh lemon juice
1/2 cup unsalted butter
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup whole milk
1 tsp pure vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the sliced peaches with 1 cup of sugar, water, and lemon juice; set aside.
Place the butter in a 9×13 baking dish and place it in the oven while it preheats to melt the butter completely.
In a separate mixing bowl, whisk together the flour, remaining 1 cup of sugar, baking powder, salt, cinnamon, and nutmeg.
Stir in the milk and vanilla extract until just combined into a smooth batter.
Remove the baking dish from the oven once the butter is melted.
Pour the batter evenly over the melted butter in the dish, but do not stir.
Spoon the peach mixture including the juices over the top of the batter.
Bake for 35 to 40 minutes, or until the top is golden brown and the fruit is bubbling.
Let it cool for 10 minutes before serving.
Notes
Use the ripest peaches you can find for this recipe to ensure maximum natural sweetness. If your peaches are very sweet, you can slightly reduce the sugar in the fruit mixture. Serve warm, ideally with a scoop of vanilla bean ice cream.
