Ingredients
2 cups fresh peaches, peeled and diced
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1 tsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 cup chopped nuts (optional)
Instructions
Preheat oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan thoroughly.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet mixture until just combined.
Fold in the diced peaches and optional nuts.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store the bread at room temperature in an airtight container for up to 3 days. For a toasted treat, serve slices lightly warmed with a pat of butter. If the top browns too quickly, tent with aluminum foil halfway through baking.
