Ingredients
2 lbs boneless skinless chicken breasts
2 tbsp dry ranch seasoning
4 tbsp salted butter (sliced into coins)
8 oz cream cheese
1 cup crumbled halal plant-based bacon alternative
2 cups shredded cheddar cheese
2 tbsp sliced green onion (optional garnish)
Instructions
Place 2-lb chicken breasts in the slow cooker
Sprinkle 2 tbsp ranch seasoning over the chicken
Add 4 tbsp sliced butter on top of the chicken
Add 8-oz cream cheese cubes
Cover and cook on HIGH for 4-5 hours or LOW for 6-8 hours
Shred chicken directly in cooker using two forks
Top with 1-cup halal plant-based bacon alternative
Add 2-cup shredded cheddar cheese
Replace the lid and let sit 10 minutes until cheese melts
Garnish with green onion before serving
Notes
Chicken thighs or frozen breasts work too
Use low-fat cream cheese for a lighter option
