Description

Transform humble cabbage into a flavorful, aromatic side dish with Indian spices. Achieve tender, caramelized wedges with crispy edges, perfect for busy weeknights or impressing guests. A budget-friendly, plant-based recipe that captures the essence of traditional Indian roasting techniques.

Ingredients

1 medium cabbage (firm, fresh)
2 tablespoons vegetable oil (e.g., coconut, canola, or sunflower)
1 teaspoon cumin seeds
1 teaspoon ground turmeric
1 teaspoon garam masala
1 teaspoon garlic powder
1 teaspoon ginger powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped fresh cilantro (optional, for garnish)
1 cup chopped red onion (optional, for added flavor)

Instructions

Preheat oven to 400°F (200°C)
Remove outer leaves from cabbage and cut into 8 wedges (core removed)
In a small bowl, mix oil with cumin seeds, turmeric, garam masala, garlic powder, ginger powder, salt, and black pepper
Brush spice mixture onto cabbage wedges evenly
Place wedges on a baking sheet in a single layer
Roast for 15 minutes, then flip wedges and roast an additional 10-15 minutes until caramelized and charred at edges
Sprinkle with chopped cilantro if using, before serving

Notes

For a sweeter twist, add 1/2 teaspoon maple syrup to the spice mixture
Swap red onion for diced potatoes or zucchini to make a main dish
Ensure cabbage is fresh and tightly packed by gently squeezing it before purchase
Garnish with lime wedges for a bright finish if desired
