Description
Juicy grilled chicken thighs glazed with homemade smoky-sweet chipotle-honey barbecue sauce. A tender, flavorful, and versatile dish perfect for family dinners or weeknight feasts.
Ingredients
4 bone-in chicken thighs (about 2.5 lbs total)
1/2 cup honey
2-3 chipotle peppers in adobo sauce (adjust to taste)
1/4 cup apple cider vinegar
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 tablespoon soy sauce
1 tablespoon chili powder
4 tablespoons water
1/4 teaspoon salt (adjusted to liking)
Instructions
Whisk together honey, chipotle peppers, vinegar, oil, paprika, garlic powder, onion powder, black pepper, cayenne (if using), soy sauce, chili powder, and water in a blender until smooth.
Place chicken thighs in a shallow dish or resealable bag, pour half the sauce over the chicken, and marinate for 15-20 minutes.
Preheat grill (gas or charcoal) to medium-high (375-400°F) or oven to 400°F.
Grill chicken breasts skin-side down for 2-3 minutes until golden, then flip and baste with remaining sauce. Cook 6-8 minutes (grill) or 20-25 minutes in oven until internal temperature reaches 165°F.
Brush with additional sauce before serving and let rest 5 minutes.
