Perfect for hot summer days, this vibrant dessert is crafted from fresh, seedless watermelon, a touch of light agave or honey for sweetness, and a splash of zesty lime juice. It is a clean, healthy dessert that kids and adults alike will love, offering a smooth, shop-quality texture without the need for an ice cream maker or artificial preservatives.
Ingredients
6 cups frozen seedless watermelon chunks
1 cup light agave nectar or honey
0.5 cup filtered water
2 tbsp fresh lime juice
Instructions
Combine 3 cups of frozen watermelon, 0.5 cup of syrup, 0.25 cup of water, and 1 tbsp of lime juice in a high-speed blender.
Blend on high speed until completely smooth and creamy, stopping frequently to scrape down the sides.
Transfer the mixture into a metal loaf pan.
Repeat the process with the remaining ingredients and add to the loaf pan, smoothing the top with a spatula.
Serve immediately for a soft-serve consistency or freeze for two hours for a firmer, scoopable sorbet.
Notes
Ensure the watermelon chunks are frozen individually on a parchment-lined tray before storage to prevent them from clumping together. Choose a heavy, ripe watermelon for the sweetest flavor profile.
