Description

Bite into these homemade peanut butter cookies with crispy edges and a chewy center, filled with a creamy peanut butter layer. These nostalgic treats rival store-bought versions in flavor and texture.


Ingredients

2 cups all-purpose flour
1 tsp baking soda
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 cup packed dark brown sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups creamy peanut butter
1/2 tsp salt
2 cups powdered sugar
2 tbsp milk or egg white (for filling)


Instructions

Preheat oven to 350°F (175°C)
In a bowl, whisk flour, baking soda, and salt
In another bowl, cream butter, granulated sugar, brown sugar, egg, and vanilla extract until light and fluffy
Mix in peanut butter and 1 1/3 cups flour until a soft dough forms
Wrap in plastic wrap; chill 30 minutes
Roll dough to 1/4-inch thickness
Cut into 3-inch circles; bake 8-10 minutes until golden around edges
Cool completely
For the filling: Whisk powdered sugar, remaining 2/3 cup flour, and 1 cup peanut butter
Gradually add milk or egg white until smooth
Spread 1 tbsp filling on 12 cookies, top with remaining 12 to make sandwiches

Notes

Chill dough for easier shaping
Use 1/2 tsp vanilla for a deeper flavor
For gluten-free option: Use gluten-free flour blend
Store in airtight containers for up to 1 week
