Ingredients

8 cups Granny Smith apples, peeled, cored, and sliced
3/4 cup granulated sugar (for filling)
2 1/2 tbsp cornstarch
1/2 cup apple juice
2 tbsp salted butter
2 tsp ground cinnamon
1 pinch nutmeg
1 cup all-purpose flour
2 tbsp granulated sugar (for dough)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
5 tbsp cold butter, cubed
1/2 cup 2% milk
1/4 cup granulated sugar (for topping)
2 tbsp hot water


Instructions

Preheat oven to 375°F (190°C).
Peel, core, and slice the apples. Place them in a medium saucepan over medium-low heat with the sugar and cook for 8-10 minutes until softened.
Whisk cornstarch and apple juice in a small bowl, pour into the apples, and stir until thickened.
Stir in the 2 tbsp butter, cinnamon, and nutmeg; remove from heat and transfer to a greased 8×8 baking pan.
In a medium bowl, whisk flour, 2 tbsp sugar, baking powder, baking soda, and salt.
Cut in the 5 tbsp cold butter using a pastry blender until small chunks remain.
Stir in the milk until just combined, then drop spoonfuls of the dough over the warm apple filling.
Mix the remaining sugar with hot water and drizzle over the dough to create a crisp topping.
Bake for 35 minutes or until the topping is golden brown and the fruit is bubbling.

Notes
