Ingredients
2 cups all-purpose flour
1 cup unsalted butter, chilled and cubed
1 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
4 cups fresh peaches, pitted and sliced
1/2 teaspoon ground cinnamon
1 tablespoon lemon juice
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking pan.
In a large bowl, whisk together the flour, granulated sugar, and salt.
Cut the chilled butter into the dry mixture using a pastry cutter or your fingers until the texture resembles coarse crumbs.
Press 2/3 of this crumbly mixture firmly into the bottom of your prepared pan to form the base crust.
In a separate bowl, toss the sliced peaches with brown sugar, vanilla extract, cinnamon, and lemon juice until well coated.
Spread the peach mixture evenly over the bottom crust.
Sprinkle the remaining crumb mixture over the peaches.
