Ingredients

0.5 cup oat flour
0.5 cup almond flour
0.5 cup unsweetened cocoa powder
0.5 tsp sea salt
0.25 tsp baking soda
2 large eggs
0.5 cup pure maple syrup
1 tsp pure vanilla extract
1 cup finely grated zucchini, squeezed dry
0.75 cup chocolate chips


Instructions

Preheat your oven to 350°F and grease an 8×8 inch baking pan.
In a large bowl, whisk together the oat flour, almond flour, cocoa powder, sea salt, and baking soda.
In a separate medium bowl, combine the eggs, maple syrup, and vanilla extract.
Stir the grated and squeezed zucchini into the wet ingredients.
Pour the wet mixture into the dry ingredients and stir until just combined.
Fold in the chocolate chips.
Pour the batter into the prepared baking pan.
Bake for 35 minutes or until a toothpick inserted into the center comes out mostly clean.
Remove from the oven and allow to cool completely before slicing into 9 squares.

Notes

Ensure all excess moisture is squeezed out of the grated zucchini using a paper towel or kitchen cloth to prevent the brownies from being too soggy. You can add extra chocolate chips on top before baking for a more decadent look.
