Ingredients
8 oz chickpea pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, sliced and soaked in cold water
1 green bell pepper, diced
1 cup Kalamata olives
1/2 cup crumbled feta cheese
1 lb cooked chicken breast, diced
1/4 cup olive oil
3 tbsp red wine vinegar
2 tsp dried oregano
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 tbsp lemon juice
Instructions
Cook chickpea pasta according to package instructions and drain.
In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, drained red onion, bell pepper, olives, and feta cheese.
In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic powder, salt, black pepper, and lemon juice to make the dressing.
Pour the dressing over the pasta salad and gently toss to combine.
Add diced chicken and fold in carefully.
Chill for at least 10 minutes before serving to allow flavors to meld.
