Description

A vibrant Mediterranean dish featuring golden, crispy chicken thighs infused with zesty lemon and aromatic herbs. Perfectly healthy, easy to prepare, and packed with bold flavors for a restaurant-quality experience at home.


Ingredients

3 lbs bone-in chicken thighs (skin-on)
2 lemons (zested and juiced, about 1/2 cup juice)
2 sprigs fresh oregano
1 sprig fresh thyme
1 sprig fresh rosemary
1 tbsp olive oil
1 clove garlic (minced)
1 tsp salt
1/2 tsp black pepper


Instructions

Preheat oven to 375°F (190°C)
Pat chicken dry and place in a baking dish
Mix lemon zest, lemon juice, chopped herbs, olive oil, garlic, salt, and pepper in a bowl
Rub mixture all over chicken in an even layer
Let marinate for 30 minutes
Roast for 35-45 minutes or until internal temperature reaches 165°F and skin is golden-brown

Notes

Use skinless thighs for lower fat content
Let marinate longer (up to 2 hours) for deeper flavor
