Ingredients
1 (14 ounce) rotisserie chicken, meat shredded
10 oz whole wheat pasta, cooked al dente
1 large avocado, diced
1 cup cherry tomatoes, halved
1 cup fresh basil leaves, chopped
3 tbsp extra virgin olive oil
1 tbsp lemon juice (substitute for white wine vinegar)
1 tbsp honey
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
Instructions
Cook pasta according to package instructions, drain, and cool
In a large bowl, combine cooked pasta, chicken, avocado, cherry tomatoes, and basil
In a separate spoon, whisk olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to create dressing
Pour dressing over pasta mixture
