Ingredients
1.5 lbs ground beef (80/20)
0.5 cup plain breadcrumbs
1 large egg
0.25 cup whole milk
0.5 teaspoon fine sea salt
0.5 teaspoon freshly cracked black pepper
2 large yellow onions, sliced thin
2 tablespoons all-purpose flour
2 cups beef bone broth or high-quality beef stock
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Instructions
In a large bowl, gently combine the ground beef, breadcrumbs, egg, milk, salt, and pepper until just mixed.
Shape the mixture into four to six even-sized oval patties.
Heat a large skillet over medium-high heat and sear the patties for 3 to 4 minutes per side until a crust forms, then remove to a plate.
Reduce heat to medium and add the sliced onions to the skillet, sautéing until soft and caramelized.
Sprinkle flour over the onions and cook for 1 minute to remove the raw flour taste.
Slowly whisk in the beef stock, Worcestershire sauce, and thyme, scraping the bottom of the pan to release any browned bits.
Return the patties and any accumulated juices to the sauce, simmering for 5-8 minutes until the gravy is thick and the meat is cooked through.
Notes
Ensure you do not overwork the meat to keep the patties tender. If the gravy becomes too thick, add a splash more broth to reach your desired consistency. Serve over mashed potatoes or steamed rice.
