Ingredients

1/4 cup grated parmesan
1/4 cup almond flour
3 cloves garlic, minced
3 tbsp onion, grated and squeezed dry
2 tsp Italian seasoning
1/2 tsp sea salt
1/4 tsp black pepper
1 large egg
1 lb ground chicken
2 tbsp olive oil


Instructions

In a large mixing bowl, combine the grated parmesan, almond flour, minced garlic, grated onion, Italian seasoning, salt, and pepper.
Add the egg to the bowl and whisk slightly with the dry ingredients to incorporate.
Add the ground chicken to the bowl and mix gently until just combined, being careful not to overwork the meat.
Form the mixture into small, evenly sized meatballs, about 1.5 inches in diameter.
Heat the olive oil in a large skillet over medium-high heat.
Add the meatballs to the skillet in a single layer, ensuring they are not overcrowded.
Sear the meatballs for approximately 15 minutes, turning occasionally until golden brown on all sides and cooked through to an internal temperature of 165°F.

Notes

Ensure the grated onion is squeezed well to remove excess liquid to prevent the meatballs from falling apart. If you prefer, substitute almond flour with gluten-free breadcrumbs. These meatballs can be stored in an airtight container in the refrigerator for up to 3 days.
