Ingredients

1 lb Ground Chicken
1/2 cup Panko Breadcrumbs
1/4 cup Grated Parmesan
1.5 tbsp Olive Oil
1 tsp Dried Oregano
1 tsp Dried Parsley
1/2 tsp Salt
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Red Pepper Flakes
5 slices American Cheese
5 cups Shredded Lettuce
Special Sauce: 1/4 cup mayonnaise, 2 tbsp ketchup, 1 tsp yellow mustard, 1 tbsp sweet relish, 1/2 tsp vinegar, dash of black pepper


Instructions

Whisk all special sauce ingredients together in a small bowl and set aside.
In a large bowl, gently combine the chicken, panko, parmesan, olive oil, and all dried seasonings.
Wet hands with cold water and form the mixture into 5 equal patties.
Heat a large skillet over medium-high heat with a drizzle of oil.
Cook patties for 5-6 minutes per side until golden and cooked through.
Place a slice of cheese on each patty during the last minute of cooking, covering the pan to melt.
Divide shredded lettuce into 5 bowls and top each with a chicken patty.
Drizzle with the prepared special sauce before serving.

Notes

Ensure you do not overwork the chicken mixture to keep the patties tender. You can substitute the American cheese with cheddar for a sharper flavor. Keep the sauce refrigerated if making ahead of time to allow flavors to meld further.
