Ingredients
1 pound / 450g ground beef (80/20 recommended)
1 medium onion, diced
3 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 can (14.5 oz) diced tomatoes
1 cup orzo pasta
1 cup frozen corn
1 cup frozen peas
6 cups beef or vegetable broth
1 tsp dried oregano
1 tsp dried basil
1 tsp salt (adjust to taste)
½ tsp black pepper
¼ tsp paprika
¼ cup fresh parsley, chopped (optional)
Grated Parmesan for garnish (optional)
Instructions
Heat a large pot over medium-high heat. Brown ground beef with a bit of salt; drain excess fat.
Add onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.
Stir in diced tomatoes, orzo, corn, peas, and broth. Bring to a boil.
Reduce heat, add oregano, basil, remaining seasonings, and paprika. Simmer 15-20 minutes until orzo is tender.
Adjust seasoning and serve garnished with parsley and Parmesan if desired.
Notes
Use halal-certified ground turkey or plant-based meat for a vegetarian alternative.
Orzo can be substituted with small pasta shapes like ditalini or farfalle.
Add carrots and peas in the last 5 minutes of cooking to retain color and texture.
Use low-sodium broth for better flavor control. Store leftovers in airtight containers for 3-4 days.
