Ingredients
6 fresh, ripe but firm peaches
Olive oil for brushing
5 ounces fresh mixed greens (arugula and spinach)
1/2 cup fresh blueberries
1/2 cup fresh blackberries
1/2 cup feta cheese crumbles
1/4 cup light brown sugar
1 tablespoon water
1 cup pecan halves
A pinch of fine sea salt
2 tablespoons high-quality balsamic vinegar
1/3 cup extra virgin olive oil
1 clove garlic, finely minced
1 to 2 tablespoons honey
1/2 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Place the pecans, brown sugar, water, and sea salt in a small skillet over medium heat.
Cook, stirring frequently, until the sugar melts and coats the pecans, about 3-5 minutes.
Spread the pecans on parchment paper to cool and harden.
Whisk together balsamic vinegar, olive oil, minced garlic, honey, and Dijon mustard in a small bowl until smooth (add salt and pepper to taste).
Preheat your grill to medium-high heat.
Slice peaches into wedges, brush lightly with olive oil, and grill for 2-3 minutes per side until charred and starting to caramelize.
In a large serving bowl, combine the mixed greens with the grilled peaches, blueberries, and blackberries.
Top with the candied pecans and the crumbled feta cheese.
Drizzle the honey balsamic dressing over the salad just before serving.
Notes
Ensure peaches are firm so they maintain their texture on the grill. You can add extra herbs like fresh mint or basil for a brighter flavor profile. Store any leftover candied pecans in an airtight container at room temperature.
