Description
Juicy chicken breasts marinated in a sweet-tangy tropical glaze, grilled to perfection and served with vibrant mango-pineapple flavors. A quick, colorful dish perfect for summer or weeknight meals.
Ingredients
1.5 lbs boneless, skinless chicken breasts
1 cup island salsa (or store-bought mango-pineapple salsa)
1/4 cup fresh lime juice
2 tbsp olive oil
1 tsp black pepper, freshly ground
1 large yellow bell pepper, sliced into strips
Instructions
Marinate chicken: In a large bowl, combine chicken breasts with salsa, lime juice, olive oil, and black pepper. Toss to coat evenly and let marinate for 30 minutes at room temperature.
Preheat grill to 400°F (200°C). Grease grill grates with oil.
Remove chicken from marinade (discard excess) and place on the grill. Cook for 5-6 minutes per side, until fully cooked through (165°F).
Add bell pepper slices to the grill for the last 2-3 minutes. Serve chicken with grilled peppers and additional salsa as a topping.
Notes
Marinate chicken up to 1 hour in the fridge for extra flavor.
Use fresh pineapple/lime for homemade salsa: mash 1/2 fresh mango, 1/2 fresh pineapple (peeled), 2 minced cloves garlic, 1 tbsp lime juice, 1 tsp honey, and 1/2 tsp chili flakes.
For a smoky char, use a charcoal grill or finish with a quick broil indoors.
