Ingredients
4 boneless skinless chicken breasts
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
4 slices fresh mozzarella cheese
4 ripe Roma or beefsteak tomatoes, sliced
2 tbsp fresh basil, sliced
1/2 cup balsamic vinegar
2 tbsp light brown sugar
Instructions
1. Season the chicken with Italian seasoning, garlic powder, onion powder, salt, and pepper.
2. Grill over medium-high heat for 6–8 minutes per side until nearly cooked through.
3. Top each chicken breast with mozzarella and close the grill until melted.
4. Simmer balsamic vinegar with brown sugar until reduced and syrupy.
5. Top chicken with tomato slices and basil.
6. Drizzle with balsamic reduction and serve immediately.
Notes
Pound chicken to even thickness for uniform cooking.
Use fresh mozzarella and ripe tomatoes for the best flavor.
Do not overcook the balsamic reduction.
