Ingredients
4 large eggs (room temperature)
2 cups granulated sugar
1 cup vegetable oil
1/2 cup whole milk
6.5 cups all-purpose flour
4 tsp baking powder
1 cup vanilla custard or pastry cream (for filling)
1/2 cup peach nectar (for soaking)
Food coloring (yellow and red, optional for decoration)
Instructions
Beat eggs and sugar in a standing mixer until light and fluffy.
Mix in the vegetable oil and milk until well combined.
Gradually add flour and baking powder until a soft dough forms.
Cover the dough with plastic wrap and refrigerate for 2 hours.
Scoop dough into uniform rounds and place on a parchment-lined baking sheet.
Bake at 350 degrees F for 25 minutes or until lightly golden.
While still warm, use a small knife to carefully hollow out the centers of the cookies.
Once cooled, fill the hollow centers with pastry cream and press two halves together.
Dip the cookies into the peach nectar and roll in a little sugar for the signature peach appearance.
Notes
Ensure the dough is chilled properly to make shaping easier. Store in an airtight container in the refrigerator to maintain freshness of the cream filling. Decorate with a light brush of natural food coloring to enhance the realistic peach look.
