Ingredients
2 large ripe bananas
1 1/2 cups gluten-free flour blend with xanthan gum
1/2 cup brown sugar
1 tsp gluten-free baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 large egg
1/4 cup unsalted butter, melted
1 tsp vanilla extract
1/2 cup milk (dairy or nut-based)
Instructions
Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners.
In a large mixing bowl, smash the bananas with a fork until they reach a chunky, porridge-like consistency.
Whisk in the brown sugar, egg, melted butter, milk, and vanilla extract until well combined.
