Ingredients
1 lb fresh cheese tortellini
1.5 lbs chicken breast, cubed into half-inch pieces
3 cups fresh broccoli florets
1 cup heavy cream
1 cup fresh grated Parmesan cheese
6 cloves fresh garlic, minced
4 tbsp unsalted butter
2 tbsp olive oil
Salt and black pepper to taste
Instructions
Bring a large pot of salted water to a boil and cook tortellini according to package directions until al dente.
Reserve 1 cup of pasta water, then drain the tortellini and set aside.
Steam broccoli for 3-4 minutes until bright green and crisp-tender, then plunge into ice water to stop cooking.
Season cubed chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown and cooked through; remove from skillet.
In the same skillet, melt butter and add minced garlic, sautéing for 1 minute until fragrant.
Pour in the heavy cream and reserved pasta water, bringing to a gentle simmer.
Whisk in the Parmesan cheese until the sauce thickens and becomes smooth.
Return the chicken, steamed broccoli, and cooked tortellini to the skillet.
Toss everything together until well coated and heated through.
Notes
Always grate your own Parmesan from a block for the smoothest melting sauce. If the sauce becomes too thick, add a splash of warm water. Feel free to add other leftover vegetables like spinach or bell peppers.
