Ingredients
1.5 lbs Flank Steak, sliced into strips
1.5 lbs Baby Yellow Potatoes, quartered
1 tbsp Olive Oil
3 tbsp Butter, divided
5 cloves Garlic, freshly minced
1 tsp Fresh Thyme
1 tsp Fresh Rosemary, finely chopped
1 tsp Fresh Oregano
Salt and black pepper to taste
Optional: Chili flakes for heat
2 tbsp Soy Sauce
1 tbsp Hot Sauce
Instructions
Combine steak strips with soy sauce, olive oil, pepper, and hot sauce in a bowl; refrigerate for at least 10 minutes.
Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat.
Add quartered potatoes to the skillet; cook for 4 minutes before stirring, then continue for 5 more minutes until golden and tender.
Remove potatoes from the skillet and set aside.
In the same skillet, add the remaining butter and the seasoned steak strips.
Sear the steak for 3-4 minutes until browned to your preference.
Add minced garlic, thyme, rosemary, and oregano, cooking for 1 minute until fragrant.
Return the potatoes to the pan and toss everything together to coat in the garlic butter.
Season with salt, pepper, and chili flakes if desired before serving.
Notes
Ensure steak is sliced thinly against the grain for maximum tenderness. If you prefer, ribeye or sirloin are excellent substitutes for flank steak. Store leftovers in an airtight container for up to 3 days.
