Description
Tender chicken glazed with sweet garlic butter and tangy BBQ sauce, served in warm tortillas. A quick, kid-approved meal perfect for busy weeknights.
Ingredients
1 1/2 lb boneless, skinless chicken breasts
4 tbsp unsalted butter
3 tbsp honey
1/2 cup BBQ sauce (alcohol-free)
1 tbsp minced garlic
1 tsp smoked paprika
Salt and pepper to taste
8 corn or flour tortillas
Optional toppings: shredded lettuce, diced tomatoes, avocado, reduced-fat cheese
2 tbsp olive oil
Instructions
Whisk together honey, 2 tbsp melted butter, 3 tbsp BBQ sauce, garlic, smoked paprika, salt, and pepper.
Preheat skillet with 1 tbsp oil. Sear chicken for 3-4 mins per side until browned, then transfer to baking dish.
Pour glaze over chicken. Bake at 375°F (190°C) for 15-20 mins until fully cooked and tender.
Warm tortillas in oven or pan. Spread remaining butter on warm tortillas.
Slice chicken into strips and serve in tortillas with desired toppings.
Notes
Use gluten-free tortillas if desired
Substitute vegetable oil for any butter ingredient
Optional: Add a splash of apple cider vinegar to glaze for extra tang
Leftover glaze can be stored in fridge for 1 week
