Ingredients
1.5 cups full-fat cottage cheese
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 cup fresh blueberries
1 teaspoon vanilla extract
Optional: 1 tablespoon honey or sugar (adjust to taste)
Optional: 1/2 teaspoon gelatin powder (to firm the mixture)
Instructions
Blend cottage cheese until completely smooth in a food processor
Add lemon juice, lemon zest, and vanilla extract
Mix in blueberries gently (use a spatula to preserve their shape)
Chill in the refrigerator for 15 minutes
Spoon mixture into a lined silicone mold or ice cube tray
Freeze for 2 hours
Pop the frozen bites from the tray and store in a freezer bag for serving later
Notes
Use low-fat cottage cheese if preferred
Add a dusting of powdered sugar if thawing for serving
