Ingredients
2 pounds fresh ripe peaches, pitted and sliced
0.5 cup water
0.5 tablespoon ground cinnamon
Juice of 1/2 lemon
Optional: sugar or honey to taste (depending on peach sweetness)
Instructions
Prepare clean half-pint jars and lids by washing them in hot soapy water.
Place the sliced peaches and water in a large stockpot over medium heat.
Simmer the mixture until the peaches are very soft, approximately 15 to 20 minutes.
Use an immersion blender or potato masher to break down the cooked peaches into a smooth consistency.
Stir in the ground cinnamon and lemon juice.
Reduce heat to low and cook for another 45 to 55 minutes, stirring occasionally to prevent sticking, until the mixture is thick and dark.
Carefully pour the hot peach butter into prepared jars, leaving a small amount of headspace.
Seal and process in a water bath or store in the refrigerator to cool completely before serving.
Notes
Ensure you use free-stone peaches to make pitting much easier. Feel free to adjust the amount of cinnamon if you prefer a subtle spice flavor. If the peaches are not naturally sweet, you may stir in a small amount of honey or sugar during the final stages of cooking.
