Description

A quick Korean-inspired beef bowl with tender beef, savory-sweet sauce, and fluffy rice. Perfect for busy weeknights and family dinners.

Ingredients

1 lb (450g) ground beef
2 tbsp gochujang (Korean chili paste)
1 tbsp low-sodium soy sauce
1 tsp minced garlic
1 tsp grated ginger
1 tbsp honey or maple syrup
1 cup cooked white rice (or brown rice)
2 cups fresh spinach
1 tbsp sesame oil (optional)
1 tbsp toasted sesame seeds (optional)

Instructions

Heat a skillet over medium-high heat. Brown the ground beef until fully cooked, 5-7 minutes.
Add gochujang, soy sauce, garlic, ginger, and honey. Stir until sauce thickens, 3-4 minutes.
Meanwhile, cook rice according to package instructions.
Blanch spinach in boiling water for 1-2 minutes, drain, and squeeze out excess moisture.
Assemble bowls: Layer rice, top with beef mixture, spinach, and optional sesame oil/seeds.

Notes

Substitute ground beef with ground turkey or tofu for a halal/keto option
Adjust gochujang amount for spiciness
Store leftovers in an airtight container up to 3 days
Reheat gently on stove or microwave
