Ingredients

2 pounds fresh figs
1 cup granulated sugar
1/4 cup fresh lemon juice
1/2 cup filtered water


Instructions

Wash the figs thoroughly and use a paring knife to slice off the tough stems.
Chop the figs into quarter-inch pieces and place them in a heavy-bottomed pot.
Add the sugar, lemon juice, and water to the pot and stir until the sugar granules begin to dissolve.
Turn the heat to medium and stir frequently until the mixture begins to bubble.
Bring to a slow boil, then reduce heat to low and simmer for 30 to 40 minutes, stirring occasionally until thick and glossy.
Carefully pour the hot jam into sterilized glass jars and seal tightly.
Allow the jars to cool to room temperature before storing in the refrigerator.

Notes

Ensure you remove the stems completely for the best texture. If the jam is not thick enough after 40 minutes, simmer for an additional 5 minutes. This recipe is completely vegan and free of processed additives.
