Ingredients
1 large eggplant, sliced (1/4 inch thick)
1 pound ground beef
1 onion, finely chopped
3 garlic cloves, minced
1 cup tomato sauce
1/2 cup tomato paste
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tbsp olive oil (for sautéing)
Instructions
Preheat oven to 375°F (190°C)
Salt eggplant slices and let sit 10 minutes; pat dry with paper towels
Heat olive oil in a skillet, cook ground beef, onion, and garlic until browned; drain excess fat
Add tomato sauce, tomato paste, oregano, salt, and pepper; simmer 10 minutes
In a baking dish, layer eggplant slices, meat sauce, and cheeses
Repeat layers, finishing with a top layer of cheese
Bake 35-40 minutes until bubbly and golden
Notes
Blot eggplant slices dry to prevent sogginess
For a crisper finish, broil 2-3 minutes at end
Store leftovers covered in fridge up to 3 days
