Ingredients
1 medium zucchini, grated (about 1.5 cups)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup unsalted butter, softened
1 cup shredded mozzarella cheese
Instructions
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and pepper.
Add the softened butter and mix until the mixture resembles coarse crumbs.
Stir in the shredded mozzarella cheese.
Squeeze out excess moisture from the grated zucchini using a clean kitchen towel or paper towels.
Add the grated zucchini to the dough mixture and mix until just combined.
Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together.
Pat or roll the dough into a rectangle about 1/2 inch thick.
Cut the dough into breadstick shapes (about 1 inch wide and 4-5 inches long).
Place the breadsticks on the prepared baking sheet.
Bake for 15-18 minutes, or until golden brown and cooked through.
Notes
Ensure the zucchini is well-drained to prevent a soggy dough.
For extra flavor, you can add a pinch of dried herbs like oregano or Italian seasoning.
Serve warm with your favorite marinara sauce for dipping.
Store cooled breadsticks in an airtight container at room temperature for up to 2 days.
