Description

This cozy taco casserole blends the crunch of Doritos, warm spices, and tender beef in one hearty dish ready in 40 minutes. Ideal for weeknights, it’s family-friendly, flavorful, and customizable with your favorite toppings.


Ingredients

1 (10.5 oz) bag Doritos (or crushed tortilla chips for gluten-free)
1 tablespoon olive oil
1 lb ground beef (or halal ground lamb or plant-based substitute)
1 packet taco seasoning
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can sweet corn, drained
1 cup salsa
2 cups Mexican blend cheese (grated)
Optional toppings: avocado, cilantro, lime, jalapeños


Instructions

Preheat the oven to 375°F (190°C)
Crush the Doritos into small pieces and press them into the bottom of a greased 8×8-inch baking dish
In a skillet, heat olive oil and cook the ground beef until browned
Add taco seasoning and stir to coat; cook for 1–2 minutes
Stir in black beans, corn, and salsa
Layer the beef mixture over the crushed Doritos in the baking dish
Spread the grated Mexican blend cheese over the top
Bake for 20–25 minutes until the cheese is melted and bubbly
Let cool slightly before serving; top with optional garnishes

Notes

Use crushed tortilla chips for a gluten-free alternative
For a vegetarian version, substitute the meat with cooked lentils or mushrooms
Add spinach or bell peppers to the meat mixture for extra vegetables
