Ingredients

3 1/3 cups all-purpose flour
2 cups granulated sugar
1 cup brown sugar
2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp ground allspice
1/2 tsp ground ginger
1 cup canola oil
4 large eggs
15 oz pumpkin puree
2/3 cup water
1 tsp vanilla extract
1/2 cup cold butter (cubed)
1/2 cup additional all-purpose flour (for topping)
1/4 cup additional granulated sugar (for topping)


Instructions

Preheat oven to 350 degrees and grease two 8×4 bread pans.
In a large bowl, whisk together 3 1/3 cups flour, salt, baking soda, and spices.
Stir in the 2 cups granulated sugar and 1 cup brown sugar.
Create a well in the center, add oil, and mix until just combined.
Crack in eggs two at a time, then add pumpkin, water, and vanilla extract; mix until smooth.
In a separate small bowl, combine the additional 1/2 cup flour, 1/4 cup sugar, and cold cubed butter using a pastry cutter until crumbly.
Divide the batter between the two prepared loaf pans.
Sprinkle the crumb topping generously over each loaf.
Bake for 65 minutes or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling. To keep the crumb topping crisp, store the bread in an airtight container at room temperature for up to 3 days, or freeze the loaves for up to 3 months.
