Ingredients
4 cups prepared peaches (about 3 lbs ripe peaches)
2 tablespoons lemon juice
1 package Sure-Jell Fruit Pectin
0.5 teaspoon butter (optional, to reduce foaming)
5.5 cups sugar
Instructions
Wash jars, lids, and bands in warm soapy water and keep jars hot in simmering water.
Blanch peaches in boiling water for 30-60 seconds, transfer to an ice bath, peel, pit, and finely chop.
Measure exactly 4 cups of chopped peaches into a large pot and stir in the lemon juice.
Add the Sure-Jell pectin and optional butter to the fruit mixture.
Bring to a full rolling boil over high heat, stirring constantly.
Add the sugar all at once, stirring to incorporate.
Return to a full rolling boil and boil for exactly one minute while stirring constantly.
Remove from heat and skim off any foam with a metal spoon.
Ladle hot jam into prepared jars, leaving one-quarter inch of headspace, and seal.
Notes
