Ingredients

5 Large Ripe Peaches, peeled and sliced into 1/2-inch pieces
1/4 Cup Granulated Sugar
1 Tbsp Lemon Juice
1 Tsp Vanilla Extract
2 Tbsp Cornstarch
1/2 Tsp Ground Cinnamon
3/4 Cup Old-Fashioned Oats
1/2 Cup All-Purpose Flour
1/2 Cup Brown Sugar
1 Tsp Ground Cinnamon
1/4 Tsp Salt
6 Tbsp Unsalted Butter, melted


Instructions

Preheat your oven to 350°F (175°C).
In a large bowl, toss the sliced peaches with granulated sugar, lemon juice, vanilla extract, cornstarch, and 1/2 teaspoon cinnamon until evenly coated.
Transfer the peach mixture into a 9×9-inch baking dish and spread into an even layer.
In a separate bowl, whisk together the oats, flour, brown sugar, remaining teaspoon of cinnamon, and salt.
Pour the melted butter into the dry topping mixture and stir until a crumbly texture forms.
Sprinkle the streusel mixture evenly over the peaches.
Bake for 40 minutes or until the topping is golden brown and the fruit filling is bubbling.
Let cool for 10 minutes before serving.

Notes
