Description

Indulge in this comforting, rustic peach cobbler that captures the heart of a country bakery in your own kitchen. Designed for busy weeknights, this simple recipe uses pantry staples to create a perfect harmony of juicy, tender fruit and a buttery, slightly crunchy golden crust. It is a family-favorite dessert that smells as delicious as it tastes, providing a warm and sweet finish to any meal with minimal prep effort.

Ingredients

3 cans (15 oz each) sliced peaches in juice or light syrup
2 cups self-rising flour
1 1/2 cups granulated sugar (divided)
2 sticks (1 cup) unsalted butter (melted)

Instructions

Preheat your oven to 350 F and grease a 9-inch baking dish with nonstick cooking spray.
Drain the peach slices well, reserving 1/4 cup of the liquid.
Place the drained peach slices and the reserved 1/4 cup of liquid into the baking dish.
In a medium bowl, combine the self-rising flour, 1 1/4 cups of sugar, and 1 1/2 sticks of melted butter until the mixture reaches a crumbly consistency.
Evenly sprinkle the flour mixture over the peaches, being careful not to stir it into the fruit.
Melt the remaining 1/2 stick of butter and drizzle it over the top of the cobbler.
Sprinkle the remaining 1/4 cup of sugar over the top for a crunchy finish.
Bake for 60 minutes or until the topping is golden brown and the fruit is bubbling.

Notes

Ensure you use self-rising flour for the correct rise in the crust. For a more golden crust, you can broil the dish for the final 1-2 minutes, watching carefully to prevent burning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
