Ingredients
1 pound lean ground beef (93% lean)
3 tablespoons low sodium soy sauce
1 1/4 cups minced scallions (divided)
1 tablespoon minced garlic
2 tablespoons rice vinegar
2 tablespoons honey
2 tablespoons freshly grated ginger
1/4 teaspoon red pepper flakes
1 tablespoon sesame oil
4 cups cooked brown rice or quinoa
1 1/2 cups shredded carrots
1 cup thinly sliced seedless cucumbers
1 tablespoon toasted sesame seeds
Instructions
Heat a large skillet over medium-high heat.
Add the ground beef to the pan and cook until browned, breaking it up with a spoon.
Drain excess fat if necessary.
Stir in the minced garlic, ginger, and half of the minced scallions.
In a small bowl, whisk together the soy sauce, rice vinegar, honey, and red pepper flakes.
Pour the sauce over the beef and stir to coat, cooking for another 2-3 minutes until the flavors meld and the beef caramelizes slightly.
Remove from heat and stir in the sesame oil.
Divide the cooked rice into four bowls.
Top each bowl with the beef mixture.
Garnish with the remaining scallions, shredded carrots, cucumber slices, and a sprinkle of toasted sesame seeds.
