Ingredients
2 cups fresh figs, stemmed and chopped
1/4 cup granulated sugar
1 tbsp lemon juice
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar, packed
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, melted and cooled
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
Combine figs, granulated sugar, and lemon juice in a saucepan over medium heat.
Simmer for 10-15 minutes until the mixture thickens into a jam-like consistency; set aside to cool.
In a large bowl, whisk together the flour, oats, brown sugar, baking soda, and salt.
Add the melted butter and vanilla, stirring until a crumbly dough forms.
Press two-thirds of the dough into the bottom of the prepared pan.
Spread the cooled fig mixture evenly over the base.
Sprinkle the remaining dough over the top and press down lightly.
Bake for 35 minutes or until golden brown, then cool completely before cutting into 9 squares.
