Ingredients

1 French baguette or crusty bread, sliced and cut into 12-16 pieces
2 cups ripe tomatoes, diced
1/4 cup fresh basil, chopped
2 tablespoons extra virgin olive oil
1 small clove garlic, minced
1 teaspoon salt
Freshly ground black pepper to taste
1 teaspoon balsamic vinegar (optional)
Grated Parmesan cheese or vegan alternative (optional)
1/4 cup extra virgin olive oil (additional for brushing)


Instructions

Preheat oven to 350°F (175°C) or use a toaster oven
Toast the bread slices until golden and crisp (3-4 minutes per side)
Whisk together tomatoes, basil, olive oil, garlic, salt, and pepper
Transfer tomato mixture to a bowl and optionally stir in balsamic vinegar
