Tender slow-cooked chicken made with salsa and ranch seasoning for an easy, flavorful meal perfect for tacos, bowls, sandwiches, and meal prep.
Ingredients
2 lb boneless skinless chicken breasts or thighs
1 1/2 cups salsa
1 oz ranch dressing mix packet
Fresh cilantro for garnish (optional)
Shredded cheese for serving (optional)
Lime juice (optional)
Instructions
1. Pat chicken dry.
2. Mix salsa and ranch seasoning.
3. Place chicken in crockpot.
4. Pour sauce over chicken.
5. Cook on low 6–7 hours or high 3–4 hours.
6. Shred chicken in sauce.
7. Adjust seasoning if needed.
8. Serve and garnish.
Notes
Use thighs for extra tenderness.
Add black beans or corn for a heartier meal.
Stir in cream cheese for a creamy version.
Refrigerate up to 4 days or freeze up to 3 months.
